    1. Bring 2 1/2 cups of water to boil in a medium saucepan
    2. Add lentils
    3. Reduce to a simmer and cook for about 20 minutes, or until lentils are tender
    4. Drain lentils and rinse with cold water
    5. Set aside.Toast walnuts in a dry pan over medium heat until lightly browned
    6. Chop walnuts
    7. Halve grapes
    8. Cut celery into thin slices
    9. Combine all salad ingredients in a serving bowl.To make dressing, whisk red wine vinegar, lemon juice and honey together
    10. Slowly whisk in olive oil
    11. Pour dressing over salad and mix
    12. Season with fine grain sea salt, if desired.
