- Roll dough into 1/8 in thickness into a 11x15 inch rectangle
- Using a pizza cutter, cut into 8 even strips
- Preheat oven to 375 degrees.Mix pumpkin, egg, cinnamon and all spice until well combined.Place 1 T pumpkin mixure on one side of the rectangle
- Place 1 tsp ricotta on top of pumpkin
- Fold crust over, and press with fork to seal
- Repeat with remaining strips of dough.Brush with melted butter.Place on a cookie sheet and bake at 375 degrees 20 to 22 minutes or until lightly brown.
