    1. Roll dough into 1/8 in thickness into a 11x15 inch rectangle
    2. Using a pizza cutter, cut into 8 even strips
    3. Preheat oven to 375 degrees.Mix pumpkin, egg, cinnamon and all spice until well combined.Place 1 T pumpkin mixure on one side of the rectangle
    4. Place 1 tsp ricotta on top of pumpkin
    5. Fold crust over, and press with fork to seal
    6. Repeat with remaining strips of dough.Brush with melted butter.Place on a cookie sheet and bake at 375 degrees 20 to 22 minutes or until lightly brown.
